These slices of bread may be served toasted or untoasted; it's all a matter of personal preference, and both are delicious! To arrange these easy appetizers, simply spread some goat cheese on top of each slice, place a few dried cranberries on top, then sprinkle with some chopped fresh rosemary leaves. That's it! Ingredients
  • 1 long, narrow baguette, sliced into 1/2-inch slices (at a diagonal, if desired)
  • 4 oz. goat cheese, softened
  • 1 cup dried cranberries
  • 1 tablespoon fresh rosemary leaves, chopped
Directions
Bread slices may be served soft (untoasted) or toasted and crispy. To toast baguette slices, see the Baked Crostini recipe.

Spread each baguette slice (if toasting bread slices, wait until they completely cool before applying cheese) with a modest amount of goat cheese (about 1 1/2 to 2 teaspoons, depending on size of bread slices). Top with a few dried cranberries, then sprinkle a small amount of chopped rosemary on top. Refrigerate any leftovers. (Tip: Refrierating prepared canapés is recommended for untoasted appetizers. Toasted slices will lose their crunch in refrigerator, so try to prepare only enough toasted canapés for your guests and refrigerate leftover cheese and rosemary separately. Toasted bread slices can be stored separately in an air-tight container for a week or more).
